I've made this several times, and it's a hit each time. It's an easy and impressive company meal. Even people who turn their noses up at the spinach come back for thirds! I like to prepare it the night before and then bake it just before mealtime. I reviewed many of the other comments and use LF/FF ricotta instead of cottage cheese, use roasted red pepper from a jar, substitute 1 T Italian seasoning instead of the dressing mix, and I like to add three links of sweet Italian turkey sausage -- remove the casings, brown and crumble, then stir into the stuffing mix. I plan to try it with artichoke hearts next. The jumbo shells can be hard to find, so I buy two boxes when I find them. Creamette seems to be the only brand in my area that has jumbo shells. This recipe is a keeper!!
