I made this for dinner tonight for my family. Wasn't sure how the kids would like it since it had spinach in it but they loved it!!!

This recipe was very easy to make. Like another reader,I was uncertain about the cottage cheese and whether my family would eat it but everyone, including my very picky 4 year-old, loved this recipe. They even asked for these shells to be on our menu for the next week!

I'm going to add parmesan next time for a little extra kick.

My boyfriend and I made these last night and were very impressed! I usually hate the texture of cottage cheese, but didn't mind it in this recipe. I just cut the recipe in half because 5 servings is too much. We even had leftovers that we will finish for lunch today! They were very easy to make too!

This is one of my favorite recipes! I've made it three times. It's wonderful fresh out of the oven. Hubby loved it. I froze a serving and brought to work for lunch one day. It's great! And who guess that it's only 270 calories per serving?! Fantastic!!

The first time I made it for a fancy dinner party. It was excellent. Everyone really enjoyed it. The second time I made it for a luncheon with the ladies, again a huge success. This one's a keeper. Because it's light, no one feels guilty partaking in desert.
