Instead of red peppers you could add some shredded carrots - my girls love it that way!

I had this for Sunday dinner and my grown children dove into it. I'm glad because it is a healthy recipe and it didn't take long to make. I made it the night before, baked it in the morning.

I haven't made this yet but it sure sounds good. I wonder if it would work if I used broccoli instead of spinach. Any comments?

Easy and very tasty. It is as tasty and good as my Italian heritage in cooking taught me. Will make it often- thanks for the great tips.

i hate anything with red or green peppers. the taste of peppers overpowers everything in any recipe. i can't stand it. even if you take them off your pizza the taste still is there. more and more people try to be too fancy. i like plain and simple. the rest of the recipe would be fine. sorry.

This looks very good, but my children doesn't like red bell pepper. Does anybody have a suggestion for a substitute that would give the texture and color, or even taste? Thanks.
