It was so easy to make my husband loved it and my 14 month old niece did too.
It makes a great appetizer or a side dish, all my guests loved it and asked for a receipe.
This recipe was very easy and delicious. I made the filling ahead of time and then filled the shells just before cooking. It worked out great with my work schedule.
I love this recipe! My mom and picky-eater siblings love it too. I like to add sauage to it to give it a little spice. Easy to make and yummy to it.

Mmmmmm..... This was great! I added some sausage, used roasted red pepper, and forgot to add the egg, but it was still delicious.
I made it according to the directions, but I put more stuffing in each shell & had less shells in the end. It was a hit. My husband doesn't like pasta & he liked it. I will make it again for sure!
I've made this several times, and it's a hit each time. It's an easy and impressive company meal. Even people who turn their noses up at the spinach come back for thirds! I like to prepare it the night before and then bake it just before mealtime. I reviewed many of the other comments and use LF/FF ricotta instead of cottage cheese, use roasted red pepper from a jar, substitute 1 T Italian seasoning instead of the dressing mix, and I like to add three links of sweet Italian turkey sausage -- remove the casings, brown and crumble, then stir into the stuffing mix. I plan to try it with artichoke hearts next. The jumbo shells can be hard to find, so I buy two boxes when I find them. Creamette seems to be the only brand in my area that has jumbo shells. This recipe is a keeper!!
This recipe was delicious the whole family LOVED it and it was very easy to make! This will definately be a regular recipe in our family.
I liked this recipe although I admitted the red pepper. When I make again, I will use some kind of meat because my picky eater (kids 5,3) did not like them and they love spinach. I think that some diced chicken might due the trip. I really enjoyed them with more cheese on top.
