Not surprisingly, these mini Easter cheesecakes are yummy. They're also adorable and festive, topped with coconut flakes and jelly beans.

I inserted my handles for the basket the night before my luncheon. My handles melted where inserted into the cheesecake and fell over. Recommend inserting the handles just before serving.

I shaved green chocolate candy wafers to use to sprinkle on the baskets as my family does not like coconut. I liked the addition of red licooorice for the handels. I don't like to use pip cleaners. I prefer my food dishes to be al edible creations.

The answer to the "grass" question you could put food coloring in cream cheese icing...would that work?

We have the same problem with people not liking coconut. I have used shaved white chocolate tinted green and that seems to go over better at our house

I make them truly "mini" by using the small muffin papers and bake them in my mini muffin pan. Still using a single Nilla Wafer in each delicious two bite treat. There is more time involved but well worth it. The recipe makes 6 dozen tiny cheesecakes.

This is SO CUTE! I will absolutely make this. I love fun recipes like this. It is crafty and uniqe. Bring something like this to any event and you're sure to be the hit of the party. And you don't have to worry about anyone else showing up with the same thing you brought.
