I absolutely loved this recipe. I am always looking for things with only a few ingredients and that are easy to make. I couldn't find shoestring licorice so I ended up using regular twizzlers and just cutting them to make them thinner. They worked out great. These were a huge hit at my family's Easter celebration. The only thing was that I didn't need as much coconut as the recipe called for, maybe I didn't put enough on top of the cupcakes. Now I'm stuck with a ton of green coconut leftover!!

This recipe is easy to follow and it tastes great. My sons asked for these mini cheesecake cupcakes for every school party.

I make these mini cheesecakes for most holidays-instead of the easter baskets-top your cupcake minis with fruit topping-such as cherry, raspberry, lemon etc. and arrange on a pretty tray and there you go a nice pretty tasty dessert for all!

I made this for a party. But i made some changes. Instead of putting a vanilla waffer in each i crushed the waffers in a food processor and put about a tablespoon on the bottom of each cup as a crust. Then i added 2 cups of cubed guava paste in the cream cheese mixture and toped it once it was cooked with guava marmelada (since it was for adults) Everyone loved it. It was fastest dessert at the party to go.

This dessert was decorated by my grandchildren who have also decorated it for Valentine's Day and for Halloween using candies of the season. It was a big hit and delicious.

made these with peanut butter cookies and oreos as well as vanilla wafers, even the adults like the oreos the best. I made 6 dozen and they would have eaten another 6 dozen.

I made these last year and sent them to my daughter's school and my husband's office. The kids loved them, and so did the adults! Getting the handles to stay put was the hardest part. Also, the "grass" can turn your tongue green. But I toasted my coconut after I dyed it and that seemed to help. I'll certainly be making them again this year. They are too cute!
