I had a few problems with this recipe. I followed it exactly as written but wasn't able to get it to flip out onto a plate. Parts of it fell and I finally had to scrape the center out. That was when I saw that a good portion of the carmel topping was crystalized onto the bottom of the pan. Not sure what I did wrong. I thought the overall flavor was good but I prefer a traditional, lighter flan to this heavier cream cheese version.

This recipe is very good! I learned how to make cream cheese flan from my grandmother. I also added variations to it. Instead of cream cheese you can add a can of pumpkin pie filling and condensed milk (for a more richer taste). Other variations are chocolate chips, crushed almonds and a vegetable known in Puerto Rico as panapen. Just experiment!

This was sooooo awesome! I was a little scared at first because it was so easy to make but my picky husband, even pickier son, and a few of my friends agree that this recipe is a keeper. The flan was gone in one day! Can't even write how much I loved it!!!!
