I browned 1 lb. of ground turkey with some onions and peppers and added it to the cheese mixture - It was delicious! It also made quite a bit more, so we had plenty of leftovers.

I also added browned ground beef and a can of refried beans to the cheese mixture. Very filling!!!

I didn't like the taste of the fat-free cream cheese. I will definately make it again, but with regular cream cheese.

This was quick, easy and a hit with the kids! I served it with a lettuce salad which rounded it all out.

This is the best recipe so far! I will definately make it again. My family enjoyed it and they are picky eaters. I thought the serving size was going to be a problem, but the enchiladas are a bit 'heavy' and will easily satisfy anyone who is watching portions. ;o)

These enchiladas are great & so easy. They have become a real hit with my family and guests. I've made them several times. I also add a small can of chunk chicken in with the cream cheese mixture....even yummier!

This dish was excellent!!!! The texture of the cheese was wonderful. Just writing about these enchiladas makes my mouth water. Next time, I'll add some diced jalepeno peppers, cilantro, and maybe some green chile for a little flare. I served with spanish rice and fat-free refried beans for an almost totally fat-free dinner.

I loved this recipe. The texture of the cheese mixture was great. I recommend spraying your dish with non-stick spray or use a non-stick dish. My husband liked this recipe, but thought there was too much cheese filling. The next time I make these, I'll use 12 torillas, instead of 6, to lessen the amount of filling, for his taste. Otherwise, it's great.

I found this very filling and enjoyable. Nice to have a meal without meat. Took above raters advice and sprayed pan. The only thing I did change was the time. Was NOT heated thru after 25 minutes had 2 heat almost a hour.
