this is a easy dinner to make. the whole family loves it. i like to use green chilies in it. if you're looking for a quick yummy dinner, this is it

I loved this recipe and taught my daughter to make them for herself. We made some variations to the recipe and made them with refried beans and cheese, then added ground buffalo burger to the cheese and had beef and cheese enchiladas. Terrific recipe.

This recipie was not only very simple but tasty... We added fresh mushrooms, cooked brown rice and chicken to our filling and it was awesome... For a little extra spice we topped it off with tortilla cheese dip before serving... This recipie is a family favorite...

I agree that this is a little too rich. Based on other comments, I added shredded chicken, corn, tomatoes, and some fajita seasoning to the filling. I also used enchilada sauce instead of salsa for the topping because my husband likes spicy things. He liked this recipe quite a bit, but I didn't enjoy it too much. The fat free cheese doesn't melt very well- it got very wet and gummy. I would make this recipe again if my husband requests it, but I'm not sure that it made a lasting impression on him. I wouldn't make it for myself.

So easy to make and very tasty! The cream cheese gives the enchiladas a great texture and adds tons of flavor. Just a note...corn tortillas are not very fun to work with in this recipe so make sure you use flour tortillas!

The filling was very rich! We put chicken in it, which was good, but neither of us enjoyed it.

I added cheddar cheese and a little cumin to the mix and then added lots of cheddar on top while baking and it was great.
