Served this salad on Father's Day for my Vegan son.He and everyone else liked it and wanted the recipe. I used Brown Basmati Rice. One of my favorite Brown Rice. Ellie

Wonderful, refreshing and filling summer salad. Perfect when mangos are in season. Makes a great vegetarian main dish when you add chopped avocado.

This was soooo yummy! I made it for a luau I was hosting and it was perfect. It looks pretty and tastes great, I doubled the recipe and by the end of the night it was GONE! So easy and so good!

I used persimmon(Fuyuu..hard and crunchy)instead of mango because I knew ripe mango and Kaki(persimmon)taste similar.I wanted to use bountiful harvest of Kaki from my garden. Dressing was plum sauce/hoisin sauce/rice vinegar, also added maitake mushroom and finely chopped celery and walnut. It was great.

This has flavor! It's eye-appealing too. Adding the rice takes it up a notch from salsa.

Yum!!! Simple, delicious and moderately healthy, this dish is inexpensive to make and if you have leftovers just stick it in the fridge to hang... someone will eat it eventually cause it's delish

I love this salad! It is a great change from my typical summer salad and has such a mix of interesting flavors. I will make this again.

This salad was delicious! Everyone at the picnic liked it. I added 1/2 of the dressing packet, but i really don't think it needed it at all. I will make this again and again!

Very good and satisfying. It's better if you let it sit overnight.
