I love this recipe. It's so simple. I like to make this when I have to take a desert to a party and it's at the last minute. I didn't have any yellow cake mix so I used a spice cake mix and it turned out lovely. My whole family and guests just gobbled it up.

My coworkers brought this recipe & the Dream Pineapple Cake recipe in for my birthday. I had made both & supplied them with both recipes to pick from. They made both & both were a HIT! This one is a little more "summery" with the coconut! - Susi B

After the first time I made this cake to take to work, I had to make one for home! They all loved it, and it was extremely simple to make!

Instead of pineapple, I sometimes use mandarin oranges, and skip the maraschino cherries. What a great, refreshing variation on this classic. Try it, you'll like it!

wow!!! this was wonderful very very moist and delicious, one of the best recipes i've ever tried!!!!if u love pineapple u will really love this. i had taken this to a family barbcue and it was gone by the end of the day. everyone enjoyed it.

I don't usually prefer pineapple upside down cake, but this one is perfect! It is super moist and yummy. It's perfect for potlucks or BBQ's. I always take one and keep one at home. Enjoy!
