I have a variation of this recipe to share- especially if you are cooking for one. I placed the filling (chicken, vegetables, cheese, and barbecue sauce) between 2 tortillas and cooked it in my quesadilla maker and it was very tasty. Just make sure you chop the chicken up small enough to close the quesadilla maker. I also placed the fillings in a tortilla, folded it in half, and cooked it in my George Foreman for a couple of minutes (until the cheese melted). Both of these variations ensure that you have fresh and hot food each night- I cooked the chicken and vegetables ahead of time, placed them in a tupperware container, and reheated enough for each meal when I needed it.
