I added just a drop or two of lemon extract to the cake batter. Once my cake was done and it was time to put the topping on it, I cut my 2 rounds into 4 rounds. It just gave me a few more layers of that great topping. I put a little lemon juice in the topping mix....My family and co-workers loved this cake.

Very light and refreshing with lemon taste. Easy and fun to make, too.

This cake is AMAZING - I made it for a birthday party and everyone loved it!! I took the advice of another reviewer and folded in lemon pudding mix into the cool whip - I left out the milk though. I will certainly make this cake again!

I mix one package of Instant Lemon Pudding with 1 cup of milk then fold that into the Cool Whip to frost the cake. Also if you use sugar-free jello, pudding and Cool Whip Free this is an excellent treat for anyone on a diet or if they are diabetic.

I made this to bring to a friends house. Everyone loved it, including men who prefer their beer instead of pastry. and they ate the whole thing! Very easy to make. Very tasty, light, and I used applesauce instead of oil for the cake, sugar free jell-o, and light cool whip which made it almost fat free! Will definately make again!
