I used a lemon cake mix with lemon flavored Jello. It was great and very moist. I took the suggestion from your comments and used lemon flavored pudding and mixed it with the Cool Whip. It was very grainy, I guess I should have added a little milk, so I frosted over it with more plain Cool Whip and topped it with rainbow sprinkles. It was a HIT!

I'm a mom on the run with 3 kids theres hardly any mess and the kids love the jello surprise. You can dress it up so many ways. For Cinco de Mayo use white cake green and red jello and for 4th of July use red and blue jello. It fun and easy.. Only wait is the jello, but its worth it on a hot day! :)

My family loves this cake! I also layer sweetened/sliced strawberries on the cake before icing with Cool Whip. I'm partial to this recipe because it uses one pan and the flavors can be changed with different Jell-O flavors and fruits--turns hot summertime into yummytime!

Our son David died 8 years ago at the age of 26 of Leukemia, this cake was one of the only things that he could eat because of soreness of the mouth, I baked at least one a week and took it to the hospital. Today I got a call from our daughter who recieved her Ph.D. in 2002 and is now entering her 3rd year of Law School at Loyola in New Orleans, she called to wish me a "Happy Mothers Day", also she and her boyfriend are arriving next Wednesday to visit, she asked me if I would make "David's" favorite cake for when they are here. I can't remember how many years I have been making this cake but at least 12. Today with my daughters call brought back special memories of your wonderful recipe. Thank You, Jo Ellen Jones

My son loved this on his 3 year birthday. We used blue raspberry jello and the blue food coloring tips for whipped cream. It was a blast!

My mom and I started making this when I was a teenager. I surprised my children with this cake and now my grandchildren are amazed by this cake. The look on their faces when they see the poke and taste it is very, very much worth making, instead of buying a plain store made cake. Happy Eating:)
