It's a celebration—cake is expected. What'll throw ’em for a loop is the ribbons of color and flavor that run through the delectable treat you set on the table.

I've made this for a number of years, and I always have rave reviews. So light, and delicious. I sometimes serve fruit on the side. I just got done with making a green version for Sr. Patiricks Day. I would recomment this for any occassion. Thanks for a great recipe.
This cake was a big hit. I made it with lemon jello and added a bit of yellow food coloring and some lemon juice to the Cool Whip to give it a light lemon flavor and color. It was great with black cherry flavor too.
Very tasty yet light and so easy to make. Whole family loved it!!!
MMMMM....this is a good cake. I will definately make it again. So good and so easy. Plus I like that you can experiment with different flavors each time. I tried rasberry and loved it! It's also pretty healthy for being a dessert and cake!
My mother in law gave me this recipe from her Weight Watchers meeting. If you use all sugar free or fat free ingredients where applicable, you save SO many calories, and it makes for a yummy "diet" dessert!!
Excellent cake! And even better the next day! Here's my variation, I call it Cherry Calypso Cake. Same as recipe, I just used cherry chip cake mix, raspberry jello, and mixed a can of drained crushed pineapple and a jar of cut up marischino cherrys to a tub of cool whip for the frosting. It was a big hit!
Received alot of good comments...flavoring was great. Did not look as defined as in the picture. Substituted fluffy white frosting instead of cool whip.
My husband is a pickey sweet tooth, but loves this one! This is made at least once a month in our house! thanks!
I made this for my son's 2nd birthday, it was a hit, especially with his grandparents. My mom was thrilled to have it again as she grew up eating this cake! I used raspberry jello and mixed the cool whip with vanilla pudding (and milk). I will be making this again, and passing out the recipe to friends!
I've been making poke cake and poke cupcakes for years. I love them! The fun thing is, you can change the gelatin color/flavor to match the holiday.
