MMMMM....this is a good cake. I will definately make it again. So good and so easy. Plus I like that you can experiment with different flavors each time. I tried rasberry and loved it! It's also pretty healthy for being a dessert and cake!

My mother in law gave me this recipe from her Weight Watchers meeting. If you use all sugar free or fat free ingredients where applicable, you save SO many calories, and it makes for a yummy "diet" dessert!!

Excellent cake! And even better the next day! Here's my variation, I call it Cherry Calypso Cake. Same as recipe, I just used cherry chip cake mix, raspberry jello, and mixed a can of drained crushed pineapple and a jar of cut up marischino cherrys to a tub of cool whip for the frosting. It was a big hit!

Received alot of good comments...flavoring was great. Did not look as defined as in the picture. Substituted fluffy white frosting instead of cool whip.

I made this for my son's 2nd birthday, it was a hit, especially with his grandparents. My mom was thrilled to have it again as she grew up eating this cake! I used raspberry jello and mixed the cool whip with vanilla pudding (and milk). I will be making this again, and passing out the recipe to friends!

I've been making poke cake and poke cupcakes for years. I love them! The fun thing is, you can change the gelatin color/flavor to match the holiday.
