Beef Barley Soup

This hearty beef barley soup gets an added layer of flavor by the addition of cut up cheese just at the end—it melts right in.

What You Need

1/2

lb. ground beef

2-1/2

cups cold water

can (14-1/2 oz.) stewed tomatoes, cut up

3/4

cup sliced carrots

3/4

cup sliced mushrooms

1/2

cup quick-cooking barley, uncooked

cloves garlic, minced

tsp. dried oregano leaves

1/2

lb. (8 oz.) VELVEETA®, cut up

Make It

BROWN meat in large saucepan; drain. Stir in water, tomatoes, carrots, mushrooms, barley, garlic and oregano.

BRING to boil. Reduce heat to low; cover. Simmer 10 minutes or until barley is tender.

ADD VELVEETA; stir until melted.

Prepare as directed, using 2% Milk VELVEETA.

Sprinkle with chopped fresh parsley just before serving.

I expected this recipe to be thick and creamy because of the velveeta, but it isn't because there's enough liquid to offset it. Still, my family loved it! And I think I prefer it more soupy. The velveeta adds a nice layer of flavor without making the soup thick.

We loved this quick & easy soup. We've made it twice & loved it both times. Even leftovers were good.

I LOVE this soup! It is so much yummier than other beef barley soup recipes because of the velveeta - my mother has been making this recipe for years and I love it.

This soup makes a great meal. We add a loaf of bread and a green salad for a wonderful easy dinner on a cold night. It also freezes well and microwaves up great the next day.
