Irish Beef Stew

What You Need

1-1/2

lb. boneless beef round steak, trimmed, cut into bite-size pieces

Tbsp. flour

Tbsp. oil

large onion, coarsely chopped

can (14-1/2 oz.) beef broth

can (14-1/2 oz.) stewed tomatoes, undrained

env. (0.8 oz.) GOOD SEASONS Garlic & Herb Dressing Mix

lb. red potatoes (about 3), cut into 3/4-inch chunks

carrots, cut into 1/2-inch-thick slices

cups hot cooked noodles

Make It

COAT meat with flour. Heat oil in Dutch oven or large deep skillet on medium-high heat. Add meat and onions; cook and stir 5 to 8 min. or until meat is evenly browned. Stir in broth, tomatoes and dressing mix. Bring to boil, stirring occasionally; cover. Simmer on low heat 15 min., stirring occasionally.

ADD potatoes and carrots; simmer, covered, 45 min. or until meat is tender and sauce is thickened, uncovering after 30 min. and stirring occasionally.

SERVE over noodles.

It was excellent, but it didn't get 5 stars from me because I thought it was missing something. I'm not sure what, but I will figure it out. My kids ate it (especially loved the carrots), my husband ate it, even my mother ate it!

I am not a big stew fan, but was pleasantly surprised by how good this recipe was! The only change I made was that I put 2 cans of the stewed tomatoes in. I will definitely be making this one again!

Love the addition of the envelope of salad dressing. We aren't waiting for the next St Patrick's Day to have this again. My husband said he'd have this over corned beef and cabbage any day. Tastes great served with beer.
