Irish Beef Stew

What You Need

1-1/2

lb. boneless beef round steak, trimmed, cut into bite-size pieces

Tbsp. flour

Tbsp. oil

large onion, coarsely chopped

can (14-1/2 oz.) beef broth

can (14-1/2 oz.) stewed tomatoes, undrained

env. (0.8 oz.) GOOD SEASONS Garlic & Herb Dressing Mix

lb. red potatoes (about 3), cut into 3/4-inch chunks

carrots, cut into 1/2-inch-thick slices

cups hot cooked noodles

Make It

COAT meat with flour. Heat oil in Dutch oven or large deep skillet on medium-high heat. Add meat and onions; cook and stir 5 to 8 min. or until meat is evenly browned. Stir in broth, tomatoes and dressing mix. Bring to boil, stirring occasionally; cover. Simmer on low heat 15 min., stirring occasionally.

ADD potatoes and carrots; simmer, covered, 45 min. or until meat is tender and sauce is thickened, uncovering after 30 min. and stirring occasionally.

SERVE over noodles.

This a great lazy day recipe. My husband loved it and it seemed comlplete with the noodles but it's still fine without them. You willwant to be careful if you don't use a nonstick pot. It kept getting stuck on the bottom even on simmer and iused a good & thick pot! Other than that, it tasted great!

I've made this several times now! It's a great "comfort food" dish. My husband does not usually care for soups or stews, but really likes the consistency when served over the pasta.

Very, Very Good! I will definitely make this again. I used a chuck roast which I think has more flavor than a round which tends to be drier to me. Just moved to the top of my stew list! I did add mushrooms, celery & a bay leaf. I also cut the potatoes & carrots smaller. I left out the noodles, but next time I think I will leave out the potatoes & make it as a soup & use noodles. Thank you so much.! I am always looking for a new recipe. I am also a big fan of your magazine :)

The meat came out so tender it was very tasty. It took longer to cook then the recipe says. I think the next time I make it I will add more vegetables. My mom and I loved it.

Yummy! This is the best stew I have ever had! I made it exactly per the recipe. It's now one of our favorite dinners. I sent the recipe to everyone in my family and they liked it too.

My husband doesn't like stew, but he loved this one! I served garlic bread not noodles with it. I used Zesty Italian dressing and added a can of mushrooms, garlic powder, salt, pepper and 1 beef gravy packet. We loved it! I cooked the potatoes and carrots seperately from the stew - I was in a hurry(!) then added them when the stew was finished cooking about 1 hour. I made a double batch , so doubled everything and added an extra can of broth. Thanks! I love stew now my husband does also!
