Irish Beef Stew

What You Need

1-1/2

lb. boneless beef round steak, trimmed, cut into bite-size pieces

Tbsp. flour

Tbsp. oil

large onion, coarsely chopped

can (14-1/2 oz.) beef broth

can (14-1/2 oz.) stewed tomatoes, undrained

env. (0.8 oz.) GOOD SEASONS Garlic & Herb Dressing Mix

lb. red potatoes (about 3), cut into 3/4-inch chunks

carrots, cut into 1/2-inch-thick slices

cups hot cooked noodles

Make It

COAT meat with flour. Heat oil in Dutch oven or large deep skillet on medium-high heat. Add meat and onions; cook and stir 5 to 8 min. or until meat is evenly browned. Stir in broth, tomatoes and dressing mix. Bring to boil, stirring occasionally; cover. Simmer on low heat 15 min., stirring occasionally.

ADD potatoes and carrots; simmer, covered, 45 min. or until meat is tender and sauce is thickened, uncovering after 30 min. and stirring occasionally.

SERVE over noodles.

TIMING IS OFF. It has been almost 2 hours and my beef and carrots are still hard. It has a good flavor but the time has to be altered, or put it in the crock pot!!

This had great flavor. I added celery and more carrots and substituted an Italian Good Seasons dressing packet. Family loved it.

I've been looking for a good beef stew recipe for almost 17 years with no luck. I finally found one! Next time I'll keep the stew and noodles separate until time to eat. The noodles get soggy very fast.

I made this using an already roasted bottom round which had been too dry. The stew salvaged the roast, making it tender and delish! We ate it more like a hearty soup without noodles and also used the Good Seasons Zesty Italian packet, since that was what was on hand. Very tasty.
