I am a diabetic and I made this recipe with Jello sugar free and fat free pudding. Rather than peanut butter I used almond butter and put walnuts in the middle and on top. It is great. Nice to know there are puddings that a diabetic can also eat.

I went one step further and on the first layer added some carmel topping. I call it Snicker Delight!

This one sounds great too! I would use sugar free pudding and fat free mile to make pudding mixture. I am going to make this for a Mother's day treat for our faculty at work. I know everyone will enjoy this combination of great ingredients!

Scale down the fat and carbs by using the fat-free version of the pudding, skim milk and low carb peanut butter - you'll save calories and still have a delicious 'guilt free' treat. Be creative, the fruit, nut and pudding combinations are endless! :-)

Banana's, choc. and peanut butter all goes together anyway, topped off with peanuts for a garnish was great to, this is a better version than those other thing's, "something" peanutbutter cups, you know the ones. Now smile to. This is more healthy for you to. Another fine, great idea.
