This salad is so great! I love being able to make it the night ahead. All the ingredients blend together perfectly with no need for dressing. I served this with the enchiladas suizas recipe and everyone raved about both!

Although I dried the lettuce in a salad spinner, the finished product was very watery. The taste was good, but not exceptional. It lacked some zip, so maybe adding seasoning to the tomatoes would pep it up. I wanted a salad that I could prepare in advance, but I think that I will go back to the standard 7-layer salad next time.

So, so simple and delish! I made this for bunko and the bowl was practically licked clean by the end of the night. I've made it a couple of times and making it the night before seems to be the best way to go!

I made this for a picnic, very easy, very quick and had great reviews. Just like 7 layer salad but with a mexican flavor to it!
