Southwest Cornbread

Best cornbread ever!

I knew my kids would not appreciate it, so I waited for a dinner party. Everyone, except my very picky children, loved it! I will definetly be making it again!

WOW_WEEZEEY! This has redeem my cornbread skills. The moistest ever cornbread I've ever tasted not even at a restaurant. I added bacon bits and usse the Mexicorn instead of using corn and pepper seperate. I also added a pinch of salt and sprinkled cinnamon on the top. Kids loved it. I paired this on a rainy day with the Black Bean Soup on this site. Wow! I will make this over and over again.

I wasn't too happy when I realized what Miracle Whip dressing was, so I omitted it from the recipe. Still, it was pretty moist and delicious with a grilled corn salad and some BBQ chicken skewers. I can only imagine how yummy it'd be when it gets colder and I can make chili with it!

I served this to my husband and his two sisters, age 84 and 77, with a pot of pinto beans. We all loved it. It was delicious hot out of the oven with butter. I would definitely make it again.

I haven't made this recipe, but by the sounds of the ingredients I know it is one we will enjoy

11oz can of corn is a 15oz can that has been drained.

terrific. i made them in muffin cups and froze the leftovers.

I think I just don't know how to make good cornbread

I used the Mexicorn with the red peppers already in it and it was great! Super easy and fast and we loved it.
