The recipe is very good as is, but for an extra touch I added some sauteed mushrooms with the tomatoes the second time I made it. My husband really loved the combination

This great side dish was relatively easy to make, and the blend of flavors and textures was nothing short of excellent! It complements so many different entrees that it will be featured quite often in this household.

Being that this is tomato and fresh green bean season, this dish fit perfectly for my taking it to a monthly church potluck. It is easy to prepare, has wonderful flavor, great color presentation and the dish received compliments from the group. I have placed it in my permanent file for future use.
