This was a great recipe! My husband loves mac and cheese, and I have been looking for a good homeade and low fat recipe. I used 12 oz. of the light Velveeta and only 1 tbl. of light margarine, so I took off some extra fat from the butter. I also used 1% milk instead of fat-free. I sprinkled it with just a little regular cheddar for sharpness. It tastes even better the a few days after it is made! Will make again!
