I've made this mac 'n cheese for picnics (recipe doubles well - cook in 9 X 13 pan) and at home for dinner. I use less butter (only 1 tbsp), but use light or regular cheddar cheese (not fat free). Using these alterations I've been told I make the best mac 'n cheese people have ever had and am frequently asked for the recipe.
