We've made this recipe for decades in my family. We love it! We call it 'Holiday Salad', but make it throughout the year too. Defintely drain as much of the juice from the pineapple as possible. It is very versatile. Yes mother 34 you can use cheesecake, lemon, lime, orange, or vanilla. Any flavor gelatin or pudding flavor you'd like. I make a version with orange jello, small curd cottage cheese, drained crushed pineapple, drained mandarian oranges, and cool whip. You can also add chopped pecans, yummy! With or without nuts this version is great. You can use sugar free gelatin/pudding mix and low/fat free cool whip, and you never know the difference. This is a huge winner with children, even with the picky eaters. The Kraft recipe may NOT be the original Watergate Salad recipe, but we think this is better. I can't bring myself to use the 'mayo' version.

could I use different pudding with this? like cheesecake flavor as we do not like pistachio. thank you

I substitute small curd cottage cheese for the marshmallows. I also garnish the top with drained, canned mandarin oranges and, sometimes, maraschino cherries.

This is not the original Watergate salad recipe. Marshmallows ruin it, as does topping. The original recipe, handed down to me, uses lime Jell-O, mayonnaise, pineapple, cottage cheese, walnuts, evaporated milk, a little sugar and salt. Marshmallows!? Blech!

I drain off some of the juice, so the salad isn't too runny. I also add a few extra marshmallows because we love them so much!!

Its sweet but good in small doses. We used light cool whip to cut calories.
