Amazing Coconut Pie

Laced with raisins and coconut, this easy pie is made in a blender. As it bakes, a crust magically forms. Serve warm or cold for a delicious dessert.

cup all-purpose baking mix

eggs

cup (1/2 stick) butter or margarine, softened

Tbsp. brandy (optional)

tsp. vanilla

cup raisins

cups (1/2 of 7-oz. bag) BAKER'S ANGEL FLAKE Coconut

Make It

PREHEAT oven to 350°F. Place milk, sugar, baking mix, eggs, butter, brandy and vanilla in blender container; cover. Blend on low speed 3 minutes. (Or, shake vigorously in tightly covered 2-quart jar 30 seconds.)

POUR into greased 9-inch pie plate. Sprinkle with raisins and coconut.

BAKE 40 minutes or until pie is set in center and top is golden brown. Cool on wire rack. Serve warm or at room temperature. Store leftover pie in refrigerator.

Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in eggs, brandy and vanilla. Add baking mix alternately with milk, beating well after each addition. Pour into greased 9-inch pie plate and continue as directed.

How to Prevent Pie Filling Spillovers

Placing a custard-type pie in the oven without spilling can be challenging. Stop spillovers by placing the pastry-lined pie plate on a baking sheet. Pour the custard filling into the crust, then place the baking sheet on the oven rack. This method stabilizes the pie and prevents the filling from spilling over the edge of the pie plate.

This is the BEST pie I have ever made. Everyone that tried it, loved it. I omitted the raisins so if you're not a big fan of them either, they're not needed.

WOW! Really good! It's almost like coconut custard. I left the raisins out, but followed everything else to a T. I will make this again.

i really liked making this - no pre crust , very simple but will leave out the raisins next time . If you like coconut custard pie then you'll love this recipe.

I love coconut pie but something happened with this recipe. Are you sure its only 1/2 C baking mix? Mine never set and not only am I totally disappointed but now I'm out of ingredients to try again. Because it wasn't setting up, at all, I kept it in the oven for about 15 minutes longer but had to take it out for fear of totally burning the coconut. Even after a night in the fridge its still as liquidy as ever and I followed the directions exactly. Any thoughts before I try again?

My husband and family love it!!!! I think this dessert is an excellent and easy way to enjoy the magic of coconut! I used fat free milk and golden raisin.
