I was afraid this would be bland but it really wasn't! Simple to mix up and get on the table for a weeknight dinner. We did have to cook this another 15 minutes or so.

This recipe was pretty easy. I love quiche, so I liked the idea that this was healthier. Roasted peppers were great in the recipe. Actually tasted really similar to my quiche, but I think I will make quiche next time instead.

Excellent Dish, so easy to prepare. We even forgot to add the mozzarella and still loved it.

Oh this is so good! I have never had anything like this before but it was surprisingly easy to make. I actually made this tonight and will have plenty of leftovers for tomorrow and my mom on Saturday. Probably works best for a family larger then two hehe. I did followed someone's advice on here and sauteed the peppers and spinach first worked really well. I also hope to try it with a pie crust, and some meat next time.

I found this very easy to make.I thought it was a great recipe & loved it.The only thing I didn't care for were the red peppers.When I make it next time I will use fresh mushrooms and chopped onions instead.

sauteed onions & garlic then added spinach. also added fried green peppers in jar and feta cheese. great with a salad.

I VERY rarely cook, and even then, mac and cheese or spaghetti. But I made this, and it's easy, quick, delicious AND healthy!! Since I don't usually cook, my tip is to COMPLETELY drain the spinach or it will take you forever to cook it. I have also added ham chunks, green peppers, and onions, and it has come out tasting great!
