This recipe is amazing! I was a little apprehensive at first, but one bite was all I needed. I prepared this using left over ham from Christmas and a frozen pie crust, and it was perfect. I cannot wait to try other variations, as this recipe is very versatile. My room mate gives this a thumbs up.
Fast and easy recipe to make. It's a good entree to make ahead of time. The recipe was assembled and placed in the refrigerator for two days. I baked it on the third and it tasted great. Jane in NC
i make these for breakfast every week. i bake them in muffin tins and reheat them for a minute in the morning. yummy, quick, and healthy breakfast!
I had to cook this 40 minutes longer than the recipe instructed. However, it was still good. I'll make some adjustments next time, i.e., cooking the spinach and peppers prior to dry them out, and will try using a pie crust. This recipe has potential.

Made this for dinner last night. I did add some onion, garlic,grill seasoning and cooked bacon. It was very tasty and colorful.
This was very good! I changed it up a bit and added a half pound of browned italian sausage and baked it in a pie crust! We had for dinner last night and breakfast the next day
This has become one of my favorite recipes of all time!!! It is incredibly easy and healthy but it is also incredibly versatile. I have made at least half a dozen variations of this pie using different meats, cheeses and veggies such as veggie sausage & sharp cheddar, turkey bacon & blue cheese and goat cheese with onions, spinach and tomatoes. This one is a winner every time!! Does take about 10-15 minutes longer to bake than the directions say but well worth the wait :)
Very good! Although I had to bake it for 50 minutes or more. I also was glad I put the pie pan on a cookie sheet - there was a lot of spillover during baking.
