Tangy roasted red peppers kick up the flavor in this "eggs-cellent" spinach pie.

The key to this is removing all the liquid from the veggies. After you drain the spinach and the peppers saute them together over med high heat until dry. It removes all the liquid. Stir frequently and dont let it burn. I chose to use fresh spinach and added fresh mushrooms and garlic to the saute pan also. I browned up 1/2 lb of hot Italian sausage and threw that in too. Seasoned with nutmeg and black peeper. This pie was outta sight!! Fast and easy..A+!
We added onion flakes, a little minced garlic, a dash of cinnamon, and used the fresh red pepper. We also baked an additional 10 minutes. It was delicious!
My family and I thought this recipe was delicious!! The only thing I did different was add cooked turkey sausage and some grill seasoning. I also used egg beaters in place of the eggs and 1% cottage cheese. But it turned out very tasty!! I did have to cook 1/2 hour longer than stated.
This recipe was quick and easy to prepare and a great match for my high protein needs. I increased the protein by adding some cubed chicken! My husband even went back for seconds! I love that it is low cal and high protein!!! We will for sure be making this over and over again!
I love this recipes- it works up quick, and it's tasty. I need a protein packed diet, and I can have a "slice" of this with some chicken and my meal is complete!
I added a little garlic power, served with a salad. The cholesterol number is high for me. I am wondering if anyone made it with egg whites only?

This was better than I expected it to be. I added a half a pound of sausage to give it a little more filling. It had excellent flavor.
I couldn't wait to have it again for breakfast. This was delicious and easy.
It was surprisingly good. It did come out runny for me. Maybe I didn't drain the spinach as good as I thought I did. I like the idea of adding meat to it.
