This is favorite of mine. Has a great quiche flavor and very easy to make.

To the reader who said it needed some spice, believe it or not, a pinch of cinnamon could do the trick--even nutmeg. For the husband who missed the meat, I could see adding some turkey pepperoni and/or turkey sausage. Not only did I use fresh chopped peppers, I added some chopped onions and mushrooms. Very versatile dish for pot-lucks and social occasions, either as side dish (as written) or a main dish (with the add-in's to taste).

I used the fresh red pepper like it says but I also used Italian spice instead of the oregano and it gave it that extra kick! My 18 month old even liked it!

I used Egg Beaters, and low fat versions of the other ingredients and added seasoned ground turkey and cooked for 1 hour -- it was great! Did not come out runny or watery and was a huge hit with the family!

Excellent vegetarian fare. The whole family loved it. Light on calories though, I would add bread sticks next time.

I made this according to the recipe except that I baked it 15 minutes LONGER than directed (for a total of 55 minutes). Came out perfectly. I drained my spinach thoroughly and it wasn't runny. Would definitely make again!

I only used about 3-4 oz of spinach for this dish - but it still turned out fantastic! It had a lot of flavor and was easy to whip up. We even used the left overs for lunch the next day.
