I made this the other day and my husband could not stop raving about it. Friday night is usually pizza night, but tonight he requested this again. I did a bit of garlic to the recipe and instead of mozzerella (not a fan of the texture) I used colby/monterey jack cheese. It was really good. Make sure you REALLY drain the spinach or it will be too runny. When you think you've squeezed the water out of the spinach, do it again. I have no idea how a 10oz box of spinach could hide so much water, but it does.
