This is a really great make ahead recipe, and should keep very well. This recipe could be made the day before. And if you don't care for onions, then you can substitute a can of drained and chopped water chestnuts for the onions. It gives you the same crunch and color as onions.

I used tender baby peas and vidalia onions. Try this salad with a generous sprinkle of crushed peanuts on top! It adds a sweet & nutty flavor that compliments the bacon and peas beautifully.

I substituted olives for celery and used ranch dressing instead of mayonaisse. MY FAMILY LOVED IT!!!!

I make this recipe but do not layer - the taste is just as good but it is much easier to make. I also use miracle whip in place of mayo and season the miracle whip to my liking.
