My husband and I enjoyed this recipe. I used my own seasoned chicken breast. It made way more than I expected so we just put the mix in some tortillas for dinner the next night.

Very quick to make and tasted great as well. The recipe made quite a bit for my family of three so we had a lot left over. So, I made the "enchiladas" out of the left overs by combining the chicken and veggies with the rice and rolling the mixture up in tortilla shells. I poured enchilada sauce over the top and sprinkled some sharp cheddar cheese. I baked them at 350 degrees for about 45 minutes. They were great! Almost better the second time around!

This is a great recipe. I cooked my own chicken and used brown rice to increase the fiber in the meal. I will certainly make this again.

To lower the sodium I used my own Mexican seasoning for the chicken breast. I also used mexican corn and red beans. It was great. Tasted even better for lunch the next day.

My sister made this recipe last night and I thought that it was really good. We added hot sauce and sour cream to ours, which made it even better. I think that it would be good as a wrap, maybe we'll try that next time. This recipe is very, very easy to prepare. It is a good recipe to make if you don't have much time to make supper. Everyone should try this recipe. I'll make it again and again.
