I don't like meatloaf. In 37+ years of marriage, I think I can count the number of times I've made meatloaf on one hand. But, my husband really likes it, and, for some reason, this recipe intrigued me.
Perhaps what got me thinking about making "Easy Pleasing Meatloaves" for dinner a couple of nights ago was its apparent ease of preparation and the simplicity of its ingredients, which included one of my favorites--Stovetop Stuffing mix. Or, perhaps it reminded me of the stuffed peppers made by our houseguest, a young man from Vladivostok in the Russian Far East who, along with my son who'd met him during his three years there as a Peace Corps Volunteer, prepared an amazing traditional Russian New Year's dinner for my husband and me and several of our friends.
Whatever the reason, prepare it I did, substituting ground turkey for the beef, and it was worth it. It was wonderful. Of course, the recipe makes enough for several folks and there's only me and my husband at home now. So
