We enjoyed this dessert immensely. It was so light and refreshing. I was unable to find the recommended cookie. I substituted 2 whole chocolate graham crackers for the wafers. Instead of the Baker's chocolate I used mini semi-sweet chocolate chips. This is a recipe I will make time and time again. I know my married children will enjoy it. Thank you for all the wonderful recipes.

This is great! We're not pistashio fans, so I used fat free white chocolate pudding and added a few drops of green food coloring when I added the peppermint extract.

Alot of family members are diabetic or on Heart Wise diets. I make this recipe as light as possible. Makes a VERY welcome change from angel food cake and fresh fruit at EVERY get together. I have substituted No Fat ice cream for the Cool Whip Lite and served it frozen. Still awesome.
