This is my new favourite side dish! So easy to make and tastes wonderful. I lined the cookie sheet with parchment paper first, and clean-up was a breeze. Everyone at dinner had seconds. Will make again for sure.

I tried this recipe last week and had to make it again the next night. My husband even warmed some potatoes up and put them in a tortilla with cheese, sour cream and salsa. This is a new family favorite which I had to send home with my Mom and Mother-in-Law.

My husband and I though the dish was very good. Very easy,and simple to make.Good as left overs as well.
