This was great! My husband and I both loved it...will make it again for sure. I added black beans for that extra santa fe touch...would eat filling all on its own:)

I made this for my fiance and I. We both loved it and he had no clue it was soy-meat! I made extra stuffing to put in a tortilla for lunch the next day. I made it with green peppers, but would next time use red.

I have made this several times. Such an easy dish and a really good company dish. I've used ground turkey and I've done it with ground pork, delicious either way. I love using red peppers instead of the green.

Love it with some Boca crumbles. Very tasty and filling. Have to keep an eye on it, though - the top can get kind of dried out.

This was great, I substitued ground turkey and added just a touch of cayanne. It was so good. My husband loved it and he is not a ground turkey eater.
