Everyone in my family loved this! I used double the amount of rice to stretch the filling and I froze the extra for a quick weeknight meal. I also added black beans for lowfat protien and covered with crushed tomatoes before baking to add vitamin C and lycopene. I served it with homemade cornbread. Even my fussy 2 yr. old ate it!

Very easy recipe. I like to make fresh salsa for it, and use red or yellow bell peppers for variety.

I absolutely loved this recipe. I made it with ground beef and put colby/jack cheese on it . I also put salt, pepper, salsa, sour cream, and olives on it and topped it with fresh cilantro and served it with black olives for my kids. My husband on the other hand did not love it and because of that I will probably not make this again. My kids ate some but did not love it.

Easy and very tasty! I used medium salsa for a little heat. Definitely, I will make this again.

I would recommend eating some type of salsa with it to give it some more spice, but other than that, it was easy and good. Filling too!
