I have made this twice now, and I love it. I used pimentos instead of the red pepper, it was easier, and baked it all together. it was yummi. this time I bought thin chicken breast, I think it will be better that way.

Very easy to make and healthy. Great for busy weeknights. I usually don't have fresh parsley in the house so I either sprinkle dried parsley flakes on top or leave off completely.

This was great. I marinated the chicken in a sun-dried tomato dressing by Kraft along with some minced garlic to add a little extra flavor. In addition, I topped with black olives, cherry tomatoes, and red bell peppers. It was fantastic!

So easy and so good. I did not use the red pepper though. I used sundried tomatoes instead. Also, I used dried parsley instead of fresh and it came out great.

I usually (time permitting) marinate the chicken breasts in a little Italian salad dressing before proceeding with the recipe. I also add some chopped black olives as part of the topping. One of those dishes you can always depend on for a quick meal.

I make this dish for my more picky guests. It's always a favorite. I usually add more lemon juice and the chicken cooks up tender and tasty.

This recipe was excellent.I will make it again, and often.I served it with orzo and a Greeek salad.My husband is from Greece and he loved it.
