I made this with a little variation. I followed the recipe, but without the peppers. And it was soooo good. But then I added cooked shrimp, and it was one of the best things I have eaten in my life!!!!

This dish was overall pretty good. I used ricotta instead of cottage cheese and added smoked sausage. I added more garlic than the recipe required, if you like garlic I definitely suggest adding at least 3-4 cloves. I'd make it again. =)

It was very good. Instead of roasted red peppers, I just sautéed the red peppers along with halved cherry tomatoes. I would definitely make it again.

This recipe was tasty and super easy to make. I used fresh red peppers, and added tomatoes. I lightly sauteed them in olive oil and mixed them in at the end. This added a fresh twist. When my boyfriend took the leftovers to work he got requests for the recipe from his coworkers.

i reduced all the servings to one person. i didnt care for it much. the spinach sauce was too thick to coat the penne. i think maybe because i didnt blend it well.

i loved this recipe it was great! everyone in my family really liked it! i would make it again around Christmas, because the colors look festive.

Once you get past the vivid green color of the sauce (all natural - from the spinach!), the taste is great. My husband is not a spinach fan but the sauce doesn't taste like spinach at all. I cooked some diced pork pieces and mushrooms to combine with the pasta and sauce, which added some different textures and complementary flavors.
