My family loved it. I would grind the lime zest more.
I saw that people said there wasn't enough lime juice, so instead of 1/3 cup, I used 1/2 cup of lime juice which was perfect! So quick and easy!
The crust made from the coconut cookies is great. I added more lime zest and lime juice to the recipe for a really yummy limey tart taste. The people in the office rated it #1. I will definately make this again and again and again!!!
I made this for my husband who LOVES key lime pie and cheesecake. I was really skeptical at first, but it turned out really great!! I didn't make my own crust (couldn't find the cookies for it), so I just bought a premade graham cracker crust. I think it took a grand total of ten minutes to make, and then I just put it in the fridge overnight. Will definitely be making this often!!!

I made it with graham crackers and coconut, it turn out pretty good, it needs more lime taste, but everyone love it!!!!!!!!!!
I used Nilla Wafers, crushed, 6 tblsp. butter and fresh coconut, chopped fine, for the crust. My brother said I should publish it. The filling is Ok, need to have more of a lime taste. Very lightly lime flavored as it is. Will figure it out.
Wow, talk about rich and creamy!! I used a reduced fat graham cracker crust, one fat free and one 1/3 red. fat cream cheese, and fat free condensed milk. I put haf of the lime peel in the pie and half to garnish. I juiced the whole lime, and added lime juice for the remainder 1/3 cup. I ended up adding more lime juice to counteract the sweetness. This is wonderful! It would probably be better with a homemade crust though. I made it a day before to allow ample time to set.
Very tasty. The church liked it very much. I almost didn't get a piece. I'm glad that I invested in the real key limes because the flavor is really quite good and had the distinctive key lime yellow color. I used a pre-made graham cracker crust too. It made the prep that much easier.
