Cheesy Mexican Bake

Before I made this recipe I read the comments and was a little worried about the cheese getting hard like others had complained about. After making it I found out why, if you make the recipe with regular chips, not baked, the cheese will get hard. That is caused by the oil in regular chips mixing with the cheese on top and causing it to brown. However the recipe was still delicious. I made it again with the baked chips and it turned out perfect! Everyone really liked it!

Recipe called to bake 40mins. I baked it less than 40 mins and the cheese was very hard. I didn't enjoy it like I thought I would. At least I tried it and now I know.

My husband and I loved this recipe! It's very tasty and has a kick to it! I added spanish rice as a side dish. This is a great recipe for Fridays during Lent as it is a meatless recipe!

Wonderful! I used frozen zucchini to simplify & ended up only baking 20 min. Very yummy.

This was delicious! My neice helped me mix the ingredients and we both were pleasantly surprised! We did not have the zucchini on hand but it was still great.

This was great and so easy to make... thought about using the cumin in addition next time to add some more flavor.

I made this recipe for the vegetarians at a party last summer. I altered the seasonings (chilli powder and cumin powder, to taste) - everyone enjoyed it, even the non-vegetarians. It tasted even better the next day.

I doubled the recipe for a large group--everyone loved it!
