I made this the day before Christmas. I really love how it tastes better the next day. I used my homemade caramel recipe throughout and still turned out real good. You can also use crushed vanilla wafers or graham crackers for the crust, and use chopped walnuts instead of the pecans. I highly recommend this recipe.
This cheesecake was the best I ever had! My son who does not eat many sweets had 3 pieces.
I served this cheesecake to the mothers of our Girl Scout Troop!! Everyone loved it!!!!! They have asked me to make cheesecakes every time it is my turn to bring snacks!!!

very gooood! The carmels are a little time consuming and I will try ice cream carmel next time though I doubt I will get the same cocsistency.
Very good cheesecake! I would recommend using a already prepared crust though.

I have made this cheesecake a few times now... I'm definately an amateur baker/cook... and even though I make it- it comes out fabulous! Everyone loves it! My fiance's mom brought a piece into work and she ended up having to hide it cause everyone was going crazy over it. EXCELLENT recipe!!
I made this recipe for Thanksgiving at my house last year. Everyone LOVED IT! I'm not only making another one this year for my house, I'm also making one for my boyfriend's parents!
I have made this recipe about a thousand times and everyone loves it! Especially my husband. He can't get enough. He's always asking when I'm going to make HIS cheesecake! LoL I make one about once a week and its gone within 2 days! I've even used this to substitute birthday cakes! People just can't get enough of it. This is absolutely my favorite recipe! And its so easy to make! Although the recipe calls for bakers chocolate, I have tried that the first time I made it. I didn't really like it so I use hot fudge or chocolate syrup which ever. It doesn't get hard and loose its taste and while the cheesecake is nice and firm the fudge is soft and melted like and over flows the sides and it also gives a better presentation. It makes it look like you've slaved all day and out did yourself. People think that I'm lying when I tell them how to make this and how long it took!
