Delish! My family didn't believe I made it. One thing I would recommend: Put some of the cookie crust on the sides (like the picture) otherwise you'll have a really thick crust.
This cheesecake was so good and easy to make, I will def be making this again =)
This cheesecake was delicious. I had one problem with it, however. The cheesecake was extremely hard to cut due to the layer of caramel on the cookie crust. It got very hard when the cake was baked, and it was terribly hard to cut through it! I will make this again, but I will not put the caramel layer on top of the crust, only on the top of the cheesecake after it has baked.
This was the best cheesecake I've ever had!! Everyone went crazy over it! They didn't believe I actually made it...they thought it was store bought :)
The cheesecake part was GREAT!!!! However, the whole bottom of my crust stuck to the pan. Perhaps it was because I used the jar of caramel sauce on top of it. It is a real pain to plate now as a result, but it still tastes great!
to "Cloefelts" I came across this recipe and was just browsing reviews when I saw your question about the crack in your cheesecake? My mother and I have battled this out for both have our own way, she puts a pan of water in the oven under her cheesecake because she says it dries and thats why it cracks...i let my cream cheese get to room temperature before mixing, i think it's because when the cream cheese is cold just out of the fridge it tends to not blend as well and the consistency doesn't come out right, it's been years and we're both always can't figure out why?
This is one of the best cheesecakes I have ever had! I did make the mistake of not evening out the crust and where it was extra thick, it was a bit hard to cut. Thank you for sharing this recipe.

This is what I always bring to Christmas potlucks because I never have to worry about bringing home leftovers. It's a family tradition (like fudge) that I only make it at Christmas time too. The only thing I haven't figured out is how to not get my cheesecake to crack on top. I wonder if it's because I live in a high altitude area? Also, I've kind of shortened the prep time to make this by using caramel and chocolate syrups; that way I don't have to worry about melting anything, using too much milk, etc.
Not as time consuming as I thought and the cheesecake was awesome.
