My husband is diabetic and so I used the sugar free pudding mix. It is excellent and I serve it to friends who do not know it is almost sugar free and they love it. Also, just put coconut on a paper plate and microwave for 30 or so seconds and the coconut is toasted. Mmmmmm.
This recipe was so easy and delicious! I made 2 for a group and I got all great reviews. Instead of the graham cracker crust, I used a Lorna Doone recipe that goes with the Tropical Coconut Cream Pie. That is the best crust ever!!
this is such a simple recipe and people just LOVE it!!!! A big hit at Thanksgiving, will make again for Christmas. Thank you for such a quick and easy recipe that tastes like it should be a lot harder to make.
I made this for Thanksgiving. IT WAS TO DIE FOR! My mom, who is 77 and a gourmet cook, said it was the most delicious pie she ever tasted. Not only did it taste AMAZING, it was absolutely GORGEOUS! I did make a few alterations. On the suggestion of another member, I used a pre-baked frozen pie crust, as opposed to a graham cracker crust. I think it was much better. I also added a little more coconut to the filling, and twice as much toasted coconut for the topping. Tip: I put the coconut in the toaster oven, on a small baking tray lined with aluminum foil, and kept a close eye on it while toasting the coconut. UNBELIEVABLE!
If I could rate this higher I would!!! I am making this again tonight (2nd time this week). I'm using banana cream pudding and no coconut. I'm toping with whipped cream, banana pieces, and finally adding vanilla wafer crumps to the top. HOPING it'll be another big hit!!!
This pie was delicious! My kids do not like coconut but they loved this dessert. I'm making it for Christmas. Also, it was so easy to make.
Very easy and quick to make. I substituted one vanilla pudding mix for one coconut. My mixture overflowed the pie shell some, but it didn't change the flavor. It was very good not to be made from scratch. I would make again.
Used 1 coconut cream pudding & 1 vanilla. It was so good with the toasted coconut on top... Everyone loved it yesterday for Thanksgiving dinner...
We had a pre Thanksgiving party and this was the talk of the table! So simple to make and really a very good pie! Wish I would have made another one or two! A must try!!!
