I used sauteed onions instead of leeks and it was heavenly; works perfectly in a crockpot.

Even my picky teenaged son who doesn't like anything with onions liked this soup. Next time I make it I think I'll leave some chunks of potato to give it more substance.

Even having used a can of chicken stock instead of all water there was absolutely no taste to it. I had to add more salt and pepper and doctor it up with pepper corns, bay leaves and herbs. I would go with a traditional soup recipe for this either from foodnetwork, or a favorite cook book recipe. Too much work to not have any flavor.

Very quick, easy and tasty. Rich and creamy with Philadelphia cream cheese. It was a big hit with my family.

Great for fall nights...I used half of the potatos to cut down on the carbs...was great!!!!
