I was brought up eating summer salad green beans, but this is the first time I've actually seen a recipe for them. Our family recipe was made with the green beans, olive oil, wine vinegar, thinly sliced garlic, sometimes a little red onion and salt and pepper to taste. For lunch, I used to like to make a "green bean sandwich" with this salad on crusty Italian bread. It was so delicious. I found the addition of tomatoes and ready made dressing interesting. I blanched the tomatoes, skinned them and seeded them before slicing. Next time, I might add red or yellow roasted peppers, julienned and sliced black olives. It's a great, versatile recipe for anytime, but particularly during the summer.
