My husband & I have been trying to eat more vegetables, so when I saw this recipe I couldn't pass it up. It is SOO good! I could almost eat it on its own! It can even be used as a topping for salad! I chopped a whole cucumber, red onion & tomatoes in the food processor. Very easy meal!
LOVED this... great for hot summer day! (disredard other review..mistaken recipe)
I would use less onion the next time I make this recipe. If you really like onion flavor make as directed. Also the flavors came out more the next day. a great lunch to pack and make while you are at work.
Nice change for a healthy lunch, normally I bring salads with me for lunch and it was getting very old. This was still healthy, and light yet filling.
It was nice to have something fresh and filling for dinner after eating heavy meals all week.
What a handy recipe this was. I came home late one night and whipped this together in little time. We were at the park all day for a softball tournament and this made for a refreshing lunch. We made an adjustment – I added green onions as my kids hate red onions. Putting the salad into a pita pocket to make it easier to eat at the park. It was a hit with the kids and they wanted more. It is a wonderful salad to take on the go and it kept well in the cooler. Next time I will try adding hummus or chicken as recommended.
I added a specialty Greek dressing to the mix and halved the lemon juice. For a bit more of a Mediterranean flavor, I spread hummus on the inside of the pita. It enhanced the flavor and added a little protein with no fat. Delicious!
This recipe was just OK for me, others are much better. I would definitely suggest using this for a salad instead of in a pita.
I made this but added chopped red and green pepper, also added olives but eliminated the lemon juice and used a drizzle of greek dressing. And I marinated it til ready to use. Was so good in a whole wheat pita!
This was very good. It was light yet it filled me up. I added diced cooked chicken to boost the protein. Yum!
